France CAILLAVET is an economist and Director of Research at INRAE, within the PSAE unit (Paris Saclay Applied Economics). After a PhD in Development Economics at Paris I, and a post-doctorate at the Casa de Velàzquez (Madrid), she turned her attention to the economics of food demand. She was director of CORELA (Consumption Research Laboratory). Her current research interests include public food policies and their impact on disadvantaged groups, as well as social inequalities in food consumption and its nutritional and environmental consequences. She has been involved in a number of multidisciplinary projects combining economics, sociology, nutrition and public health.
